Crispy Garlic Smashed Potatoes
I had a hard time naming this smashed potatoes recipe. Do I get descriptive and call it Crispy Smashed Potatoes with Garlic and Parmesan? Crispy Garlic Butter Parmesan Smashed Potatoes? Smashed Potatoes with Cheese?
I swear, the hardest part when it comes to writing up these blog posts are naming it! Anyways, clearly I ended up with Crispy Garlic Smashed Potatoes.
I’ve mentioned time and time again that I am a potato fanatic. I love them mashed, plain, as a hash brown, as fries, in tater tots, oven roasted, and of course smashed!
Crispy smashed potatoes are a favourite as they’re equally soft and fluffy on the inside and super crispy on the outside. They go well with anything as one of my favourite sides but I won’t hesitant to eat a bunch on my own as a main meal lol.
Plus they’re so versatile – while in this smashed potatoes recipe I’m using butter, garlic, and parmesan, you can easily change it up by either using a different cheese, coating it with pesto, coating it with chipotle sauce, topping it with bacon and sour cream, the possibilities are endless!
What You’ll Need To Make This Easy Smashed Potatoes Recipe
- small yellow potatoes
- salt
- olive oil
- butter
- garlic
- parmesan cheese
- optional: chives, pepper
- you’ll also need a large pot and at least 2 sheet pans
How to make Smashed Potatoes
- Heat your oven up to 450F.
- In a large pot, add in all your potatoes, cover it with water, and add 1/4 cup of salt. Bring the pot to a boil and reduce to medium heat, allowing the pot to simmer until the potatoes are able to be pierced. This can take between 15-20 minutes.
- While the potatoes are cooking, in a bowl, combine the olive oil, melted butter, and grated garlic.
- Once done, drain the potatoes, and transfer the potatoes onto one to two sheet pans that has been lightly greased or sprayed with non-stick.
- Using a potato masher, a mug, or a second sheet pan, lightly flatten the potatoes so they’re “smashed” but not fully flattened.
- Drizzle 3/4 of the mixture that was made earlier.
- Roast the potatoes for 20 before drizzling the rest of the 1/4 mixture and roasting for 15 more minutes.
- Remove the smashed potatoes from the oven again and sprinkle on the parmesan cheese before letting it roast for up to 5 more minutes, letting the parmesan melt.
- Serve your crispy garlic smashed potatoes immediately with some chives, salt, and pepper if you wish.
