Easy Tortellini Meal Prep
This tortellini meal prep has been such a lifesaver lately. It’s been so busy and my meal prep time has gotten cut down so I’ve been trying to find creative ways to make a week’s worth of lunches as fast as possible and as easy as possible.
This tortellini meal prep is perfect if you’re short on time or if it’s your first time meal prepping and want something easy. Plus the variations for this meal prep means you can easily make a “different” meal prep per day if you’d like! This quick pasta meal prep has really been a life saver.
The Basics of This Tortellini Lunch
- bacon
- eggs
- cheese tortellini (or stuffed tortellini of your choice)
- peas
How To Make This Easy Pasta Meal Prep
- Heat your oven to 400F to cook your bacon for 15 minutes (or you can cook it on a skillet if you prefer). Break into 1 inch pieces when done.
- While the oven is heating up, add your eggs to a pot of water and bring it up to a boil to make hard boiled eggs. I used the 7 minute method for my eggs. Dunk them in an ice bath while waiting for the rest of the components to finish cooking. See this post here to see how long you should cook your eggs to your desired yolk!
- At the same time, bring a large pot of salted water to boil before adding in your tortellini. Cook according to the package – mine says 6-8 minutes.
- When the tortellini is done, rinse it under cold water to keep them from sticking.
- To assemble, divide the tortellini, bacon, peas, and cut egg into 4 airtight containers.
- Note: to thaw the frozen peas, just have them sit in some water
How To Add Variation To This Tortellini Meal Prep
- I love fish cakes! They’re so easy to make. To change things up, I’ll use the bacon grease to fry up a few strips of fish cakes until they’re crispy to add to the tortellini meal prep.
- If you want to add some more greens, you can also sauté some spinach to add to the meal prep (I again used the leftover bacon grease because why not)
Other ways to change up this tortellini meal prep are by adding:
- ham
- red onions
- cherry tomatoes
- navy beans
- peppers
- a creamy hummus salad dressing
- a creamy roasted garlic dressing
- a lemon basil vinaigrette

Notes
- Note: to thaw the frozen peas, just have them sit in some water
- You can either eat this as is or serve with salad dressing on the side or this lemon basil vinaigrette!
- This meal prep can be served hot or cold.
